Ingredients
2 boiled eggs, chopped
1 ripe avocado
1–2 tbsp mayonnaise
1 tsp yellow mustard
Salt, to taste
Black pepper, to taste
2 slices toasted bread
Optional: chopped chives or parsley for garnish
Instructions
Peel and chop the boiled eggs.
Add avocado to a bowl and mash with a fork until mostly smooth.
Mix in mayonnaise and mustard until creamy.
Fold in chopped eggs.
Season with salt and black pepper to taste.
Toast bread until golden and crispy.
