Egg Fried Rice
Rice is one of those staple foods I believe we should always have on hand. It’s affordable, filling, and somehow always finds its way onto the dinner table. It also happens to be one of the items we frequently receive from free meal programs and community pantries. One day, I wanted to make something a little different for my family. We had a free meal that came with rice and vegetables, and instead of simply reheating it, I decided to turn it into egg fried rice. Since day old rice is actually recommended for making fried rice, it was the perfect opportunity. The vegetables were already there, the rice was ready to go, and all I had to do was add a few eggs and seasonings. Sometimes the best meals come from using what you already have. The result was a simple, flavorful meal that tasted like takeout without the takeout price. Who knew yesterday’s rice could have such a glow up? 😄

Ingredients
4 cups cold cooked rice (day-old rice works best)
2 tbsp vegetable oil or olive oil
3 eggs, beaten
1 cup frozen peas and carrots
½ small onion, diced
2 green onions, sliced
2–3 tbsp soy sauce
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
Optional: sesame seeds for garnish
Instructions
1. Scramble the eggs
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
Add beaten eggs and scramble until cooked. Remove from the pan and set aside.
2. Cook the vegetables
Add the remaining oil.
Sauté onions, peas, and carrots for 3–4 minutes until tender.
3. Add the rice
Break up any clumps of cold rice.
Add rice to the skillet and stir-fry for 4–5 minutes.
4. Season
Add soy sauce, garlic powder, onion powder, and black pepper.
Mix until the rice is evenly coated.
5. Finish the dish
Return the eggs to the skillet.
Add green onions and stir everything together.
Cook for another 1–2 minutes and serve hot.

Tips for Success
Use Cold Rice
Fresh rice is too soft and can become mushy. Cold, leftover rice gives you that restaurant-style texture.
Don’t Crowd the Pan
Cook on medium-high heat so the rice fries instead of steaming.
Taste Before Adding Salt
Soy sauce is already salty, so taste first.

Add a teaspoon of butter at the end. It sounds simple, but it makes a big difference.

A pinch of crushed red pepper or a drizzle of chili oil wakes everything up.

Sauté 2 cloves of fresh garlic with the onions for extra flavor.

Secret Takeout Style Trick
Mix 1 tablespoon soy sauce with 1 teaspoon sesame oil and stir it in during the last minute of cooking. It gives the rice that classic takeout flavor.
Chef Tip
Whenever I have leftover rice in the refrigerator, fried rice is usually on the menu. It’s one of those recipes where you can use what you have, clean out the fridge, and still end up with something that tastes like you planned it all along. Sometimes the best meals start with leftovers.
