From Leftovers to Let’s Eat: How I Turned Sausage & Noodles Into a Flavorful Dinner

At my community center, there are evening activities that I like to attend. As caregivers, we have to find little things we can do for our mental health and this is one of mine. Every Tuesday night, there’s something different. This week was chair yoga. After class, food is served. Since it’s a small group, we sometimes get the privilege of taking leftovers home and listen, anybody who knows me already knows… I’m not leaving without my Tupperware. 😂 The meal that night was sausage with peppers and onions in red sauce, served over egg noodles, with garlic bread and a side salad. Now, the salad and garlic bread? Amazing. No complaints there. But the sausage and peppers situation… yeah, needed more flavor. Nobody wanted the leftovers. And one thing about me do not like wasting food. Especially knowing people are out here struggling to eat. So of course, I took it home with a plan to revamp it for the next day’s dinner. First, I separated the sausage, peppers, and onions and spread them out on an oiled baking tray. Then I added the sauce to the noodles and reheated both in the oven at 350°F for about an hour. While that was heating up, I made a quick homemade marinara sauce using onion powder, garlic powder, crushed red pepper, oregano, basil, parsley, salt, and black pepper. I usually add a pinch of sugar, but the original sauce was already a little too sweet so we skipped that. Once everything was done, I mixed the noodles with the sausage and added my fresh marinara sauce. And let me tell you it turned out so much better. Like, “okay now we’re talking” better. Honestly, I don’t think my family would’ve touched that meal if I hadn’t given it a little upgrade. I paired it with some focaccia bread I had in the freezer from the pantry, and just like that leftovers turned into a whole new dinner.

Quick Homemade Marinara Sauce

Serving Size: 4 servings

Yield: About 2 cups of sauce

Prep Time: 5 minutes

Cook Time: 15–20 minutes

Ingredients

  • 2 cups crushed tomatoes (or tomato sauce)

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • ½ teaspoon crushed red pepper (adjust to taste)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon dried parsley

  • Salt, to taste

  • Black pepper, to taste

  • 1–2 tablespoons olive oil (optional, for richness)

Instructions

  1. In a medium saucepan, heat the olive oil over medium heat (if using).

  2. Add the crushed tomatoes and stir well.

  3. Mix in onion powder, garlic powder, crushed red pepper, oregano, basil, and parsley.

  4. Season with salt and black pepper to taste.

  5. Let the sauce simmer on low heat for about 15–20 minutes, stirring occasionally.

  6. Taste and adjust seasoning if needed.

Serving Suggestions

  • Pour over pasta, sausage, peppers, and onions

  • Use as a dipping sauce for bread

  • Add to baked dishes for extra flavor

Flavor Tip

If your sauce tastes a little too acidic, you can add a tiny pinch of sugar—but if you’re using a sauce that’s already sweet, go ahead and skip it like you did!
